This dish showcases the deep, rich flavors of an espresso-rubbed pork tenderloin, perfectly complemented by the tangy sweetness of a balsamic gastrique. The bold espresso crust enhances the tender, juicy pork, while roasted sweet potatoes provide a naturally sweet, caramelized contrast. Bright and slightly crispy brussels sprouts round out the plate with their earthy flavor and satisfying texture. It's a dish that balances boldness and comfort in every bite.
Espresso-Rubbed Pork Tenderloin with Balsamic Gastrique, Sweet Potato Purée, and Caramelized Brussel Sprouts
Ingredients
Pork Tenderloin:
1 pork tenderloin (about 1 lb)
2 tbsp finely ground espresso beans
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp brown sugar
½ tsp cayenne pepper (optional)
Salt and black pepper to taste
2 tbsp olive oil (for searing)
Balsamic Gastrique:
½ cup balsamic vinegar
2 tbsp granulated sugar
2 tbsp cold unsalted butter, cubed
Pinch of salt
Sweet Potato Purée:
2 medium sweet potatoes, peeled and cubed
½ cup heavy cream (adjust for desired consistency)
2 tbsp unsalted butter
Salt and black pepper to taste
Brussel Sprouts:
2 cups brussel sprouts, trimmed and halved
1 tbsp olive oil
1 clove garlic, minced
Salt and black pepper to taste
1 tsp lemon juice (optional)
Instructions
1. Prepare the Espresso Rub:
In a bowl, mix together finely ground espresso beans, smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper (if using), salt, and black pepper.
Rub the pork tenderloin generously with the espresso mixture. Allow it to marinate for at least 20 minutes or up to 2 hours in the refrigerator.
2. Make the Balsamic Gastrique:
In a small saucepan over medium heat, combine the balsamic vinegar and granulated sugar. Stir until the sugar dissolves.
Bring the mixture to a simmer and reduce by half, stirring occasionally, until thick and syrupy (about 5–7 minutes).
Remove from heat and whisk in the cold butter cubes, one at a time, until the sauce is smooth and glossy.
Season with a pinch of salt. Set aside.
3. Prepare the Sweet Potato Purée:
Place sweet potato cubes in a large pot and cover with cold water. Add a pinch of salt.
Bring to a boil and cook until the sweet potatoes are very tender (about 15–20 minutes).
Drain the potatoes and transfer them to a food processor or blender.
Add heavy cream and blend until smooth. Adjust the amount of cream to reach your desired consistency.
Transfer the purée back to the pot over low heat. Stir in the butter until melted and fully incorporated.
Season with salt and black pepper to taste. Keep warm.
4. Cook the Brussel Sprouts:
Blanch the brussel sprouts in boiling salted water for 3 minutes. Drain and pat dry.
In a skillet over medium-high heat, heat olive oil. Add minced garlic and sauté until fragrant (about 30 seconds).
Add the blanched brussel sprouts, cut side down, and cook until caramelized and tender (5–7 minutes).
Season with salt, black pepper, and a splash of lemon juice if desired.
5. Cook the Pork Tenderloin:
Preheat your oven to 400°F (200°C).
In an oven-safe skillet over medium-high heat, heat olive oil.
Sear the pork tenderloin on all sides until browned (about 2–3 minutes per side).
Place a roasting rack inside a baking pan or oven-safe skillet. Transfer the seared pork onto the rack. This prevents the sugar in the rub from burning by allowing air to circulate and juices to drip away.
Roast in the preheated oven for 12–15 minutes, or until the internal temperature reaches 145-155°F (63°C). I personally like mine at 155.
Remove from the oven and let the pork rest on the rack for 5–10 minutes before slicing.
6. Assemble the Plate:
Slice the pork tenderloin into medallions.
Drizzle the balsamic gastrique over the pork.
Serve alongside a generous scoop of sweet potato purée and the caramelized brussels sprouts.
Enjoy your elegant and flavorful meal!
