Cooking in a High-Rise Kitchen
A professional kitchen has eight burners and a walk-in. A Newport condo has four burners, one oven, and a refrigerator already holding your groceries. The way that gap gets closed is planning, not improvising: the menu is written for the equipment, mise en place is staged in the order the burners free up, and dishes that need to rest do the resting while the next one cooks.
